The easiest way for a novice is to go to WalMart and buy a Lanski sharpening system for about $25. It has bevel gages so that you can get the angle perfect on each side. Steep angles are for utility work like chopping. Narrow angles are for slicing like fillet knives. About 22 degrees is a good angle for most purposes. The type of metal, quality of metal, and tempering all affect whether the knife will even be able to get really sharp and stay sharp.
If this is a collectors piece, leave it alone. Dull original condition is much more valuable.

for Christmas last year my fiance was bought a really sharp, good quality knife from my father.
This knife is stainless steel and at the moment very sharp. But as with all knives, at some point it's going to go dull. We would like to prevent this, with a nifty way of keeping the knife sharp.
Has anyone got a good tip on how to maintain the knifes sharpness?
To keep a knife sharper for longer onlly use it on plastic or wooden chopping boards. Glass or perspex will blunt the knifes edge quicker.
A good quality sharpening stone or steel will help to maintain the knifes edge but only attemp to sharpen it yourself if you know you can or have before or you will ruin the knife. Best advice is get it sharpened professionally about once a month.

Perhaps I should start by admitting a bias: Many years ago, lying on Boston's grassy Esplanade by the Charles River on warm summer nights, I learned what a symphony orchestra should sound like, with Arthur Fiedler conducting the Boston Pops Orchestra. Those concerts were free; these seven compact discs are not--not quite. But for any lover of light classical music, they are certainly one of the be...
